Reply with quote | #31 | Oddly I could be convinced to cook eggs even though I don't like them. For some reason I seem to have a touch with eggs and just about always get them just right. Have never been wildly successful with home fries/hash browns. I think you need a big ol' flat top grill to do them right.
And I could be convinced to make Ramos Fizzes... those I do like! |

This recipe and text is taken from New Olreans DRINKS and how to mix 'em by Stanley Clisby Arthur. HARMANSON, Publisher 333 rue Royale, Nouvelle Orleans; 1937 1 tablespoon powdered sugar 3-4 drops orange flower water 1/2 lime -- juice only 1/2 lemon -- juice only 1 jigger dry gin 1 white of egg 1 jigger heavy cream 1 squire seltzer water 2 drops extract vanilla (optional)
Mix in a tall barglass in the order given; add crushed ice, not too fine as lumps are needed to whip up the froth on the egg white and cream. Use a long metal shaker and remember this is one drink that needs a long, steady shaking. Keep at it until the mixture gets body -- "ropy" as some experienced barkeepers express it. When thoroughly shaken, strain into a tall thin glass for serving. |

Have no idea what a squire is, the recipe I use has a normal measurement -- I just cut and paste one from online to save typing it all in again. We usually make them in the blender so it's less work and more frothy. A bit of work but quite good. |

We had Eggs Benedict at IHOP today and it was good. The eggs were perfectly cooked. The hollandaise could have been a bit more lemony and spicy, but overall it was very acceptable. There are so many things that can be done wrong to this dish and it seems most places manage to do at least one of them, but I thought they managed quite well. __________________ “Avoid any diet that discourages the use of hot fudge.” |

Foodie, I'm so glad you tried IHOP's eggs benedict. I think you're absolutely right about the number of things that can go wrong with this dish, but (believe it or not, readers...) IHOP pulls it off! Don't forget to ask for Marsha if you're dining in Celeveland. Reply with quote | #44 | We live in Hixson and don't venture up that way too often but I'll keep it in mind on the next trip to Stamper's. We ate (again) today at NYDiner and I had their Eggs Benedict. I am really particular about my eggs, and their hollandaise was superbe.
I did mention to the server about the SSM curse, and her reply was "just say you don't like us!" They have new menus, thankfully, which are much easier to read.
